Exhaust riser getting real hot while trying to winterize

So I'll probably  catch grief for this but I was taught  to suck antifreeze  through the suction line to winterize  my boat, if I put a garden hose in my suction hose I get water out of my exhaust but when I try to suck coolant out of a bucket it only takes coolant when thermostate opens and exhaust  risers  are getting very hot,, I removed the thermostate  and same issue, my impeller  is also new so I'm drawing a blank why it won't suck it from a bucket and why exhaust is hot, I also cleaned the strainer with same results

The raw water pump is happy pumping air.  If you have any way for air to get into the inlet hose, that's what will go through the pump.

Why not drain the block and manifolds the usual way?  If you want to add antifreeze after that, just pour it in through the thermostat hole in the block.

And make sure to replace the impeller you probably burned up

Your garden hose is pressurized (to like 50psi), so it forces the water into the impeller pump.  Your antifreeze in the bucket needs to create a vaccum, which is a totally different dynamic.  Whether the thermostat is open or closed, the coolant should still be flowing.  I drain the water from my block & hoses and then pour 2 gallons of antifreeze in thru the J hose.  If you still want to do the bucket, if you pour it in thru a funnel that is several feet higher than the pump that should help.
