How to set up 2013 21 V-ride for surf?

Hey Guys I'm looking for all opinions on how to set up my 21 V-Ride for the Best surf wake it can make? Any ideas?

Weight Setup? Speed? Rope Length. Anything that you think could help since i don't have surf gate :(

I run the following and get a nice clean wake on the regular side.

Center and both rear tanks full

750# rear locker

650# front

400# surf side in cabin

No wedge

10.8MPH

Same question for the Sunscape 21 LSV I just bought. We're a long time slalom skiing family but are going to wake boarding and maybe surfing since smooth water is getting scarcer when the "kids" can get to the lake on weekends. I've got the Wedge and plan to get ballast tanks at least for the two rear compartments. No cruise control yet. Good to have or not necessary? In other words, is it difficult to hold a fairly steady speed at surfing speeds.
