If you have the malibu cruise (not perfect pass), press the top left (cruise) button to get to the cruise display, set the speed with the up/down arrows. Finally press the red center button on the left to turn cruise on.

At that point you are ready. accelerate the boat and once you hit within the range of the set speed you will hear a double beep and the display will change on the bottom to a bar with an opening. in the opening will be a small box. adjust the accelerator to keep the box with the opening in the bar (near the top end of the box is better) and cruise is engage.

To disengage, just throttle back.
