I have a 2007 Response LXI. I recently noticed that it is listing slightly to the drivers side as it sits at the dock. This is very unusual as there is only minor

water in the bilge area. Has anyone seen this before?

The '07 and newer RLXI with the Cut Diamond hull is sensitive to weight distribution. Just make sure you have the boat weighted evenly.
