Congrats on the new boat! Couple things on the oil change. Use the drain line on the bottom of the motor to get the oil out, not an extractor down the dip stick tube. There are several threads on here from people that have used an extractor and the tube gets stuck or breaks off.
The oil filter part number is Napa 1060 for the larger size, and 1069 for the smaller. Personal preference, but I run the 1060.
I use Mobil Delvac 15w40 in mine, cheap and plentiful.
Looks like those spark plug wires are original, you might consider changing them.

I think the low coolant condition caused your overheat, not the other way around. I've had similar happen when being low on coolant, will cruise just fine but then overheat when you come to a stop/idle, caused by air in the system. Like said above, get creative and find the leak, or try UV dye and a black light.

Adding toluene will raise the octane but will also require more fuel volume to keep AFR's in check, similar to ethanol/E85. Mixing 100 unleaded with 87 if the cost isn't extreme is going to be the easiest solution.

I have had it before where the impeller looks fine, but was wore just enough that it would not flow enough water to keep the engine cool, so that could have been the issue. In that case when I was surfing with current would start to heat up setting alarm but against was totally fine).
From a leak perspective, I did have the clamps (back right looking at engine) for the heater pump leaking on my 2022 25LSV but there was signs of coolant from those in the bilge.
