Houseboat easy meal ideas?

I got nothing quick shawn, we eat like kings on our trip...here is what our menu is looking like this year...

salmon, filet mignon, ribs, stuffed bell peppers, chicken teriyaki, tri tip, fish tacos..lots of salads, roasted veggies, bread...that is what the dinner menu is looking like. Lunch is cold cuts and dinner left overs. Breakfasts are french toast, omelletes, bisquits, swedish pancakes, fruit, granola... we also have three desert nights - pazookies, oatmeal carmalitas, chocolate fondue...

Our last food bill was not cheap coming out of Costco, but hey your on vacation! We have three families and each family cooks two dinners and two breakfasts. Lunch, you are on your own...

Baked pasta (shells, spaghetti, etc.), salad, bread.

Burgers, bratdogs, chips.

Mexican - tacos, tostados, burritos - we cook the meat ahead and freeze it then just warm it up.

Fresh sausage on the grille, grilled or oven potatoes (sliced potatoes, onion, butter, seasoning and wrapped in foil).

Lunch is usually ham, turkey, etc - whenever someone wants it.

Breakfast - Pancakes & Sausage, Egg casserole, Cereal and Fruit.

We usually plan for one lunch or dinner at a marina to relax some, and our final meal is unplanned and we just eat what is left from all the other nights.

Years ago when we when we used to camp with a small stove we would buy a premarinated, precooked, prime rib roast.. Then slice it thin and cook it on the small stove. It was ridiculously easy because you are just heating it up and was good. Imagine it would be even better on a houseboat. Just need to heat and serve.

We make it a point to never use the oven, especially in Shasta. We grill pretty much everything.

Every couple shops for, plans, prepares and cleans up for 1 dinner. It's fun that way because you don't have 10 people in the kitchen......you only have to think about ingredients for 1 meal.........you only have to take time out of 1 afternoon to prep....... everyone else can relax. etc.

Taco/Burrito Buffet.

Grilled steaks, veggies, rice dish.

All-American BBQ: Burgers/dogs/chips/watermelon/potato salad/etc

Grilled Salmon, big salad, bread

Stir Fry

Kabobs

One night we try to go into Silverthorne for pizza and beer and.......Air Conditioning.......ahhhhhhhhhhhh

Your menu looks alot like ours... right down to Siverthorn Pizza.

+1 on never using the oven. We do all bbq except for one night when we do spaghetti. We pre make the sauce and freeze it though. We do dinner crews too. Everyone has to cook one night for the group. Breakfast and lunch you are on your own.

Some awesome ideas in here. We use the omelette bags at scout campouts all the time. Works great and you can throw them in a burrito wrap so they're more filling without making toast. Just be sure to squeeze as much air as possible out of the baggies before boiling them. Heated air expands, you know. :whistle:

Hot mexican dip.

Feeds 6-8 in a 13x9 deep cake pan.

Base layer:

Three cans refried beans plus one can pinto beans. Mix with 1lb. fried ground beef (if not vegetarian) and 1/2 packet taco seasoning.

Spread evenly.

Mid layer:

50/50 mix of queso and sour cream. 1/2 of a large container of each. (We mix the whole containers and use the rest as dip for chips or Taquitos).

Layer it on like you would ice a cake, but thicker.

Top layer:

Shredded cheddar. Covered 1/8" to 1/4" thick.

Black olives on top optional.

Premake it at home in a disposable pan. Get to the lake and bake it 15 minutes at 400 (longer and lower if frozen for transport) and eat with chips. Take some Taquitos and bake them at the same time if you like.

No cleanup other than a serving spoon and whatever bowls you eat out of.

EDIT: This reheats very well in single servings if you don't want to use the oven on the boat. Bake it at home and microwave each serving. It's a lot easier to serve up cold as well as it's not runny like it is hot. We make that amount and it feeds our family of four at least twice each over a few days.

Premake burger, potatoes, onions, pepper and butter in foil and grill. Great as left overs too.

Am I the only one? When I'm on the water, I don't eat and don't get hungry. Basically water and good beer. :)

We will be at Shasta next week, water level is currently at 90' below full pool...10' higher than last year this time. We will also be hitting Silverthorn Bar/Grill for some pizza, beer, A/C, and to get the heck away from my parents and kids.

We make these two/three dishes (attached recipes) the day before we go, and they are great for an immediate microwaved heat up meals and snacks for the first couple days.

Slow cooked Carnitas and/or Barbacoa Burrito (nearly identical to Chipotle)

Meat already done, vegetables already sliced, cheese grated, etc. Can make nachos or a salad with it if you don't want to bother with a tortilla

Alton Brown's Mac n' cheese (Google it and it will be easy to find)

Otherwise:

Breakfast: eggs, bacon, toast, coffee, OJ, Milk, Cereal

Lunch: Sandwiches, hot dogs, left over dinner (steak/sandwiches, carnitas from previous dinner)

Dinner: BBQ everything: Morton' black label tri-tip (prepackaged Costco), chicken, burgers, pizza

Breakfast is a shake, buy a NutriBullit.

Banana, frozen berries, baby spinach, protein powder and liquid...milk, almond milk, water or a mixture. We also add Chia and Hemp Hearts. If you take vitamins its a great place to add them as well. You can put all sorts of things in a shake, vegetables, yogurt.

Lunch

Cook up lots of chicken breasts before going on the trip. Add them to wraps for the kids, salad for the healthy crew members and marinate a few and just eat them with some raw veggies and dip.

Dinner is BBQ time

Take things like Pork Cutlets, Steak, Burgers, Dogs, small sizes quick and easy to cook with pre made salads and veggies.

Big props to everyone who posted to this thread.

Casseroles on the grill worked great. Leftover night was a hit last night, when we made tijuana style bacon wrapped hot dogs.

Campfire permit was friggin awesome. Do it for sure.

Water balloon launcher provided tons of hilarity.

I stopped in redding and bought a couple of bb guns on the way and those were great fun too (highly recommend adding these to your shore leisure)

Brats pork steaks leftovers repeat. Throw in 2 resturants nights and call it a week. Cereal, stuff like that, Atkins drinks for breakfast, usually no lunch. We like to eat, however we have scaled back the gormet meals so supper is not such of a PITA, after being on the water all day.

Just returned from 8 days on Shasta. BBQ Tri Tip 2 nights, bbq marinated Chicken breast 2 nights, tacos 1 night, burgers 1 night and the last night we picked up pizza from Silverthorn. Costco pasta salad, potato salad macaroni salad and baked beans were out for most meals. Lunches mostly turkey or leftover Tri tip sandwiches and polish dogs one day. Costco muffins, pancakes or eggs and sausage depending on day and how much alcohol was consumed the night before.

4 days on the Pitt Arm and 4 days on the Squaw. Great boarding everyday. We keep our houseboat at Jones Valley. It sucks driving down the dirt to launch when lake is low but once you're on the water all is good! By the way one of the owners is selling his share (6 total shares/owners) in our houseboat 10k plus $200 month for mooring and insurance leftover goes into maintenance kitty .... Probably should post this in for sale section. PM me for more info.

Crock pot pork roasts, crock pot beef briskets, crock pot Mexican chicken, crock pot Mac and cheese. These are all good lake meals in general to keep everyone out of the kitchen and on the water/dock. We usually do the prep while making breakfast. 10 minute prep on all.

can i ask what the bb guns were for?

We used them for "shooting stuff." Is there an alternative use for bb guns that I'm unaware of? Edited by shawndoggy

I prefer air soft guns. You can shoot stuff AND people. Only stings for a little bit. Just be prepared to be shot back at some point.

They make biodegradable bb's for them too.
