Engine is bogging down - help!

My 2002 Malibu Sunscape 21 LSV has been on the lift all summer thus far.  First time in water took kids tubing and about a minute into it, the engine temp shot up, beeping started and the boat throttled down on its own suddenly.  Temp went right down, and got back at slow speed.  Replaced a (apparently) thermostat on engine and changed out impeller and flushed it out.  Took kid skiing and a minute in, same thing.  Now had the manifolds replaced.  Took it out.  Ran at about 34 and the  Same thing. Beeping and slowed down on own.  Ran again at around 28 mph and with some turns, Temp gauge is all over the place, shoots up after about 45 seconds almost to 240 but then went down, way down below 100, and when it went back up at hits 240, beeping starts.  Bogs down.  Fuel gauge shows empty when it’s full.  RPM shows 1000 even at throttle going 34 MPH.  Any ideas?

With the gauges going haywire, I suspect maybe a battery/battery voltage issue.  How old is the battery(s)?  Are the connections to the battery(s) clean and well-connected?
