Random engine stalling

Alright I need some help diagnosing an engine stalling problem I’m getting on my 1999 Malibu sunsetter with the 350 Indmar engine.

I pulled the boat out of winterization a month or so ago and I went ahead and replaced both fuel filters, spark plugs, and impeller. Boat ran fine and then all of a sudden it started stalling when I’d be going at speed. It doesn’t do it every time, but when it does it will bog down to idle speed, it doesn’t shut off, and I have no problems starting it. It’s like it is being starved for fuel or something. I have a feelings it’s related to the maintenance I did because at the end of last season it had no problems at all.

when I did the spark plugs I forgot the dielectric grease so maybe there’s a bad connection or some corrosion? Or maybe the distributor needs replaced... fuel filters are new and I added some octane boost so gas should be good. Anyone have an idea?

Fuel injected. I’m just not cure how changing spark plugs and a fuel filter would cause this... unless something else over the winter would have triggered it.
