Water near engine & surfing

2 questions:

-any tips for finding a good surfing wake? I have a 2008 Wakesetter 21 VLK. Trying to figure out the right speed, wedge, ballast combo. I’m 6’5” 250lbs so I realize not the easiest to move. 
 

-also having challenges getting all water out of the boat when On lift. Water staying in the boat towards the back by the engine. The plug under the engine is challenging to get to in order to remove and when I remove the outside plug in the back of the boat under the wedge not all the water drain. Any help is appreciated. Also is there any cleaner I could put in there to keep from mold/smell happening?

Leave all hatches and seats open if u have lift canopy that's open on rear it will dry out pretty quickly. Also get a 2pk $8 pull/push kids squirt guns are perfect for getting a little water out.
