Does anyone know how to stop electrolysis? I have a 2006 Sunsetter LXi.

Zinc anodes should help.  They eventually get consumed and need replacement, but they are far cheaper than other parts.  I have an egg anode on my prop shaft just forward of the strut.  If you have a bad problem, maybe one on the rudder would help also.

If you are in salt/brackish water use zinc anodes, for freshwater use magnesium anodes.

They are available in various sizes and shapes. To get maximum protection, you have to bolt one anode to every piece of underwater gear that needs to be protected and replace them as they get eaten away by the electrolysis. They are called sacrifice anodes for a reason.

Electrolysis occurs mainly on aluminum parts like your wedge- and swim platform brackets. The stainless or NiBrAl parts, like raw water pickup, strut, shaft, rudder and prop are a lesser concern.

Putting one on the shaft will not safe your wedge bracket from corroding.

Will shaft anodes protect the prop? Mine is getting quite pitted. I believe it's NiBrAl but may be Al.

An anode should help.  I have an egg anode on my shaft.  I had it just in front of the strut for several years, but I moved it close to the hull because I was getting a bit of cavitation burn on the strut and rudder.

No way your prop is aluminum on a Malibu.
