They could easily paint the trailers after they came back from the galvanizer.  I called the Mobile, AL galvanizer when I was considering just making my own new trailer.  He told me he could schedule a day for me so I could bring the trailer over in the morning and it would be done around noon.  About $700 for a one-off, depending on the actual size of the trailer.  The price is about half that if you are bringing a stack every few weeks.

The great thing about painting directly after galvanizing is that the trailer is clean and ready to paint, so it is less work than prepping your own welds and other rusty places.  I think they would save the labor of prepping a trailer if they just had it dipped, and the prep job is superior since the galvanizer uses a detergent bath to degrease/clean the thing, then an acid pickle bath to remove all the rust and etch the surface.

I have used two-part automotive epoxy paint over galvanizing before, and it sticks really well.
