Euro F3 restoration project. Foam questions

As some of y’all know I’m in the process of restoring an old euro f3. I’ve done the stringers I’ve cut the floor and screwed it down. I’m going to fill in the gaps this weekend. I am going to order the foam this week. I have looked at a couple and done some research but haven’t got exactly what I need.

I need to fill the both sides. I don’t know how much I will need or what pound rating to go with. I plan on using some bags for a better wake. I’m just trying to see if anyone has done this and what they found to be the best.
