For what it is worth, my 2017 VLX had issues with the coolant level when it was new.  I saw the coolant temp warning during the break in period.   I talked to service, and they told me the same thing about the heater, and generally getting air out of the system.   I kept topping it off, but it continued to drop for the first 25 hours.  I reported it as an issue for the 25 hour service, and they found a loose clamp.   After that, I have no longer had issues.

Could you have a loose clamp after the winterization/summerization cycle?   Probably worth a look if you have not already.
