Boat Running better???

So my boat typically runs at about 160-176 on any given day pulling surfers and boarders or cruising. I'll notice it climb to 179 for a bit when I turn the boat off which makes sense since the water in the block is just sitting. When I turn the boat back on, it will go down significantly down in the 160's unless I really start pulling a lot of weight surfing and then it's back in the low 170's. Today for some reason, I noticed the boat won't climb past 145 even when the boat is at a halt with motor off. Surfing, boarding, it's down as low as 129. What gives, I have changed the impeller exactly 40 hours ago and just check the oil level. Normally, the block is honestly too hot to touch. Now I can touch it. Is my boat about to explode or should I enjoy the cooler temps? Oh, and who can tell me how to fix the broken studs in my dash. This is a 2011 23LSV with the 350 Monsoon.

Maybe the thermostat is sticking open? Not dangerous but may not perform as well at lower temperatures. Also can never rule out a bad sender or gauge, except you say it feels noticeably cooler.

You should pull the thermostat and replace it.  Too cheap of a part to just check it.  I'm guessing you don't have a saltwater series - open cooling systems have more chance for thermostat damage.

Yes, but testing the old one will let you know if you found the problem and testing the new one before installing will prevent a bunch of swearing when it dawns on you that the new one might be defective.
