You can use a small digital display, fuse and an on/off switch connected directly to the stereo bank and within the shaded portion of the observers locker. That should give you the most accurate reading.

Yes, having enough battery capacity to never have to cycle below 12.0 volts (50% discharge) will give you better battery lifespan by a good margin and better weekend to weekend battery performance in the interim.
